Berries are deliciously sweet and just plain old good for you. Whether you prefer blueberries, strawberries or raspberries, they’re all packed full of vitamins, minerals, and disease-fighting antioxidants. Berries are also virtually fat-free, relatively low in sugar, and almost devoid of sodium. Plus, the versatility of berries is endless, as they can be eaten for breakfast, lunch or dinner.
If you’re a fan of decadent breakfast foods, here’s an incredibly delicious recipe for mixed berry crepes that you’ll thoroughly enjoy.
What You Need
- 2 cups of cow’s milk, goat’s milk or soy milk
- 2 whole eggs
- 1 cup and 2 tablespoons of all-purpose flour
- 1/2 teaspoon of salt
- 1 tablespoon of olive oil
- 1/2 teaspoon of orange zest
- 1-1/2 pint of blueberries
- 1-1/2 pint of strawberries
- 1-1/2 pint of raspberries
- 2 teaspoons of fresh lemon juice
- 3-1/2 tablespoons of granulated sugar
- 1-1/2 cup of whole-milk ricotta cheese
- 1 teaspoon of butter
- Confectioners’ sugar for dusting
How To Prepare
In a blender, combine the milk, eggs, flour, salt, oil, and zest. Blend the mixture until it is smooth and then transfer it to a bowl, cover it, and refrigerate it for a half an hour. In a large bowl, combine the strawberries, blueberries, raspberries, lemon juice, and 2 tablespoons of the granulated sugar (or to taste). In another bowl, combine the ricotta and the remaining 1 and a 1/2 tablespoons of granulated sugar.
Set the mixture aside.
Next, in a crepe pan over medium heat, melt 1 teaspoon of the butter to coat the pan evenly. Pour in 1/4 cup of the batter and spread it with a spatula. Cook it until the crepe is golden underneath, for 1-2 minutes. Flip the crepe over and then cook it for 1-2 minutes and then transfer it to a plate and cover it with aluminum foil. Repeat the process to make 8 crepes.
After this, cover half of each crepe with the ricotta mixture and 1/4 cup of the berry mixture and roll each of them into a tube. Place 2 crepes on each individual plate. Top each crepe with 1/2 cup of berries and then dust them with confectioners’ sugar. Serve immediately.
