I’m a huge fan of kabobs! Whether you prepare them with steak, chicken or fish, kabobs are a great way to sneak more veggies into your diet. Here’s a hearty, low-calorie recipe for chicken kabobs that’s incredibly rich in protein, healthy fats, and key micronutrients.

What You Need

  • 2 large skinless chicken breasts
  • 3 large zucchinis cut into large rounds
  • 3 red peppers
  • 12 cherry tomatoes
  • 1 cup of Iberia Extra Virgin Olive Oil
  • 1 tablespoon of basil
  • Salt to taste
  • 8 bamboo skewers

How To Prepare

Preheat your oven to 400°F. Cut the chicken breasts into large squares and then insert them in the bamboo skewers alternating the zucchinis and red pepper. You can make vegetarian kabobs using the remaining skewers by combining the cherry tomatoes, zucchini, and red pepper.

Next, add the salt and Iberia Extra Virgin Olive Oil. Place all the kabobs in your oven and cook them for 30 minutes. Once the kabobs are done, drizzle them with more olive oil.
