Peanut butter is by far one of my favorite treats, as it’s a naturally sweet and savory blend of protein and good fats, fiber and countless health-promoting micronutrients. In addition to it’s flavor and overall nutritional quality, the versatility of peanut butter makes it the perfect inclusion to virtually any meal. Here’s one of my choice recipes for dessert or healthy snacking that combines peanut butter with heart-healthy oatmeal and potassium-rich banana.

What You Need

  • 2 tablespoons of high-quality peanut butter (or another nut butter of your choice)
  • 1 medium banana, mashed
  • 1/4 cup of oatmeal, uncooked
  • 1 whole egg
  • 1/2 cup of egg whites
  • 1 scoop of vanilla protein powder
  • 1 teaspoon of baking powder
  • Dried banana chips, optional

How To Prepare

Preheat your oven to 350°F (177°C). Mix all the ingredients together in a small bowl. Place muffin liners in six holders of a muffin tray and then spray a light coat of a nonstick cooking spray. Evenly disperse all of the mixture into the muffin liners (Optional: Top each uncooked muffin with a few dried banana chips). Place the tray in the center rack of the oven and allow the muffins to cook for about 12-15 minutes.

This delicious recipe makes about 6 servings containing 4 grams of fat, 8 grams of carbs, and 10 grams of protein at only 106 calories each. Enjoy!
