I don’t know about you, but bacon just makes everything taste better to me. Still, I seldom eat it as a main course. Instead, I generally treat it as more of a garnish for meats and omelets or a ‘salty’ seasoning for salads. Funny enough, I feel the exact same way about goat cheese. I can add it to just about everything I eat. Here’s one of my favorite go to recipes that combines the savory flavors of bacon and goat cheese with chicken for a low-carb, protein-rich entree.
What You Need
- Eight boneless skinless chicken thighs (about 5 ounces each)
- 8 strips of high-quality turkey bacon
- 4 ounces of soft goat cheese
- 1/2 teaspoon of Montreal Chicken Seasoning
- 1/2 teaspoon of sea salt
- 1 teaspoon of pepper
- 2 teaspoon of minced garlic (about 4 cloves)
How To Prepare
Preheat your oven to 400°F. Gently wash the chicken thighs and then season them with sea salt, pepper, and minced garlic. Sandwich equal amounts of goat cheese (about 1 ounce) between two chicken thighs and then wrap them with 2 slices of turkey bacon.
Place the chicken thighs on a baking sheet/tray lightly greased with a vegetable oil-based cooking spray and then sprinkle them with Montreal Chicken Seasoning. Cook the chicken thighs until they are well-browned. The turkey bacon should be crisp.
Although ovens vary, your cooking time should be around 45 minutes to 1 hour.
