Oatmeal is an excellent low-calorie source of high-quality whole grains that’s also naturally rich in fiber and health-promoting micronutrients. In addition to it’s superior nutritional composition, oatmeal is one of the most versatile foods around as you can enjoy it for breakfast, a snack or even a dessert.
While I’m generally not a big dessert eater, I do enjoy oatmeal raisin cookies on occasion. But, I make a pretty “guiltless” version of this treat that’s relatively low in sugar and high in lean protein. Here’s the recipe.
What You Need
- 10 tablespoons of high-quality nut butter or WOWBUTTER
- 5 egg whites
- 5 scoops of whey protein (preferably vanilla)
- 2 cups of oats
- 1/2 cup of cow’s, goat’s or soy milk
- 1/2 cup raisins, unpacked
How To Prepare
Heat your oven to 350°F (177°C). Mix the nut butter or WOWBUTTER and egg whites, and then microwave the mixture on high for 30 seconds. After microwaving, mix it again for a smooth and consistent appearance. Repeat this step up to 4-5 times until all traces of egg whites have dissolved.
Gradually add the protein (one scoop at a time) and stir it into the mixture. Next, add in the soy milk followed by the oats. Continue blending the mixture until it is thick and “sticky” and, finally, add the raisins. Scoop tablespoons of the mixture onto a baking sheet/tray and bake for 10-15 minutes. You can store any extra cookies in your refrigerator or freezer.
This recipe yields about 20 delicious cookies. At a mere 85 calories, each cookie contains 9-10 grams of protein with only 5-6 grams of sugar.
