Hearty Grilled Vegetable Skewers

I absolutely love grilling vegetables and they’re so much healthier than traditional side dishes like potato salad and macaroni & cheese. To boost the overall nutritional value of veggies, I generally prepare them with high-quality fruit oils like extra-virgin olive oil, avocado oil or coconut oil, as the fat housed in these oils naturally enhances absorption of fat-soluble vitamins (A, D, E, and K), most of which vegetables contain.

Always on the hunt for the latest and greatest products I was recently introduced to Carrington Farms’ Garlic Flavored Liquid Coconut Cooking Oil. Due to its relatively higher smoke point, favorable fat composition, and savory hint of garlic, I highly recommend this one for bringing out the rich flavors of grilled vegetables. What You Need

  • 1/2-cup of Carrington Farms’ Garlic Flavored Liquid Coconut Cooking Oil
  • 1/2-cup of lemon juice
  • 1/2-cup of low-sodium soy sauce
  • 1/2-cup of red bell pepper, sliced
  • 1/2-cup of yellow bell pepper, sliced
  • 1/2 of a red onion, sliced
  • 20 cherry tomatoes
  • 1/2 of a zucchini, sliced
  • 1/2 of an eggplant, sliced
  • Pinch of salt
  • A set of skewers*

*If you use wooden skewers, be sure to soak them first.

How to Prepare

Place all the vegetables in a large bowl. In a small bowl, blend the cooking oil, soy sauce and lemon juice, and then pour the mixture over the vegetables. Cover the bowl and marinate the mixture in the refrigerator for 30 minutes. Next, place the vegetables on skewers and set them aside. Spray your grill with Carrington Farms’ Coconut Oil Spray (or another high-quality brand) and then set your grill to medium heat. Finally, place the vegetable skewers on the preheated grill and cook them for 12-15 minutes.
