Those of you who either know or follow me are fully aware that I love a good salad. The classic Cobb salad is among my most favorite preparations and it’s incredibly nutritious. Here’s a recipe for my ‘Hearty Chicken Cobb Salad’, which only takes about 20-25 minutes to prepare.

What You Need

  • One 8-ounce boneless skinless chicken breast
  • 1 romaine lettuce heart, chopped
  • 1 Roma tomato, chopped
  • 1 medium cucumber, cubed
  • 1 avocado, cubed
  • 2 hard-boiled eggs, cubed
  • 4 tablespoon of Gorgonzola cheese crumbles
  • 4 strips of high-quality turkey bacon, thinly sliced widthwise
  • Sea salt, to taste
  • Fresh ground pepper, to taste
  • Garlic powder, to taste
  • Extra-virgin olive oil

How To Prepare

Pan fry the turkey bacon with olive oil and set it aside. Tenderize the chicken breast using a meat tenderizing mallet, chop it into cubes, and then lightly season it to taste with sea salt, pepper, and garlic powder. Next, pan fry the chicken breast in olive oil and then set it aside.

Place the romaine lettuce in one section of a serving plate. Arrange the tomato, cucumber, avocado, and Gorgonzola cheese crumbles in their own sections on the serving plate. Lastly, arrange the chopped chicken breast, turkey bacon, and eggs on the serving plate and you’re done.

Packed full of high-quality protein, good fats, and fiber, this recipe makes two deliciously filling servings at 520 calories each. Add either a raspberry vinaigrette or honey mustard dressing for a real flavor boost. Enjoy!
