Better Than Ramen Edamame Vegan Pasta

Growing up, instant ramen noodles were among my most favorite comfort foods, especially the beef and chicken flavors. Who would have thought something so tasty and satisfying could cost just 50 cents to a dollar a pack?

I also thrived on ramen well through my college years, oftentimes cleverly combining them with chopped chicken, eggs, and lots of hot sauce. I certainly wasn’t alone, as ramen was (and still is) among the most popular go-to foods for cash broke college students.

Though a staple food for many, ramen noodles certainly aren’t the healthiest food choice, as they’re packed full of empty calories and sodium. And, even though I sometimes crave the savory flavor of this cheap convenience food, I simply can’t rationalize indulging, not even as a splurge.

Luckily, there is light at the end of the tunnel, as I was recently introduced to Explore Cuisine Organic Edamame Spaghetti.

Solely comprised of organic edamame beans, a single serving houses over 20 grams of high-quality vegan protein, healthy fats, fiber, and key micronutrients including numerous B-vitamins, calcium, and iron.

Since this product is branded as “spaghetti”, I was originally going to use it as a pasta substitute. But, after getting creative in my kitchen, I quickly realized I’d stumbled upon an excellent alternative to my beloved ramen.

Here, I’m going to share with you the perfect recipe for satisfying sudden cravings for instant ramen noodles and it is totally vegan-friendly. Whether you’re vegan, vegan curious or just looking to try something new, I’m sure you’ll enjoy it!

What You Need

  • 4 ounces of Explore Cuisine Organic Edamame Spaghetti
  • 6-8 baby Portobello mushrooms, stems removed and chopped
  • 1 cup of chopped walnuts or slivered almonds
  • 4 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 2-3 tablespoons of low-sodium soy sauce
  • 1/2 tablespoon of Sriracha sauce
  • Freshly ground black pepper and sea salt, to taste

How To Prepare

Prepare the pasta in lightly salted water according to the package directions and then drain and rinse it under cold water for about 20-30 seconds or until it’s no longer hot. Once the pasta is done, set it aside.

In a large skillet, heat the olive oil over medium-to-high heat. Toss in the mushrooms with the minced garlic and then stir and sauté them for 3-4 minutes.

Next, stir in the walnuts or almonds and continue to sauté the mixture until they start to soften and turn golden and fragrant. Drizzle in the soy sauce and Sriracha sauce, sprinkle on the salt and pepper, and blend all the ingredients well.

Once all the ingredients are well-blended and heated throughout, transfer the pasta mixture to a dish and serve it hot.

Incredibly rich in high-quality protein, healthy fats, fiber and a ton of health-promoting micronutrients, this unbelievably tasty and savory recipe is perfect for two. Makes for a great leftover lunch. Enjoy!
