A Lettuce-Less Salad

Salads are a great way to get more vegetables and fruits into your diet. But, you don’t have to settle for bland, boring, flavorless blends. Here’s a quick and easy recipe that’s bursting with flavor and nutrition. Makes the perfect quick side, main dish or healthy snack for any day of the week.

What You Need

  • 4 bell peppers (green, red, orange, and yellow)
  • 1 Granny Smith apple
  • 1 Fuji apple
  • 1⁄3 head of large cauliflower
  • 1 large head of broccoli
  • 1 cucumber
  • 1 red onion
  • 3/4 cup of dried cranberries or Craisins

How To Prepare

Chop all the ingredients into small, bite-sized pieces and combine them in a large bowl. Throw in the dried cranberries (or Craisins) and combine well. Chill (if desired) and serve. That’s it!
